It is about 3 inches in diameter with magenta blushed tops and white bottoms that flow into bulb's tapered thin taproot. It is trimmed before being sold and their bone white flesh is firm, earthy and sweet.
Mostly eaten raw, used in smooth purees or as a complimentary ingredient in butter, gives rich flavours when cooked. Loaded with fiber and vitamins A, C, K, E, folate and other B vitamins, as well as minerals like manganese, potassium, magnesium, iron, calcium and copper. Also a good source of phosphorus, omega-3 fatty acids and protein.
